Anyone have experience with this ink getting in contact with water - like if some water gets splashed on the paper, will it run/bleed or will it stay?

It will run and smear on the paper if it comes in contact with water, especially if the ink was recently applied to the paper. The pen uses liquid ink, not gel, so if you're looking for a water resistant pen this is not an ideal pen for you (gel pens are more water resistant).

Can you remove the color, and grave copper with the Rollerpen it self without color, is he strong enough for embossing?

I don’t think it’s designed for that use
