Do these have a wound third, or plain? I'm having a very hard time finding flatwound 11's with a plain third.

Nope, these have the 3rd wounded but it's kind of easy just look for d'addarios 11's or dr's have them too

The higher strings are plain steel. The wound strings are all flats that are polished very smoothly. There are windings but they are a very smooth flat ribbon that is also polished. By flat ribbon rather than a round winding it is flat and then polished.
