what are the dimensions of the cooler

I just measured it.  From the ground to the top of the outer cooler (not including the extension handle) it is 21 inches tall.  The inner plastic liner measures 14 1/2 inches tall.  It is more rectangular shape so it is 8 1/2 inches on the sides, and 11 1/2 inches on the front and back in width.  The top of the cooler Poofs up above the plastic liner so there is room to store extra utensils and things which is why the full height is 21 inches (also including the legs).  The outer blue covering has pockets which also poof out for storage so the dimensions are a little bigger when you're packing extra things on the side.  Other than the little wheels which hinder its rolling sometimes, I really like this cooler.

Need to take this on plane - can the handle/wheels be removed?

No, handle and wheels cannot be removed...but it's just like a piece of luggage. Carry-on suitcase size. Plus you can stack another piece of small luggage or backpack on top and wheel both at the same time...

If I put this cooler on it's side (let's say to fit in the trunk), will it leak everywhere?

I haven't tried that but I would imagine that since the top is a zipper, any liquid could leak out. It should definitely fit upright in your trunk, though.

Will this survive being in a hot car on a hot summer day? How good is the insulation/performance?

I had it out in the sun for approx 8 hours and it worked fine. I had put those frozen blocks on the bottom and the some ice on the top and everything kept nice and cold.  To be honest, by the end of the day, the ice had melted and the blocks were back to liquid filled, but the compartment was still cold and so were the drinks we kept in it.
